đậu phụ sốt cà chua (Fried Tofu In Tomato Sauce)

Cuisine Type : Vietnamese [ẩm thực Việt]

Per wikipedia - Vietnamese cuisine encompasses the foods and beverages of Vietnam, and features a combination of five fundamental tastes (Vietnamese: ngũ vị) in the overall meal. Each Vietnamese dish has a distinctive flavor which reflects one or more of these elements.



Traditional Vietnamese cooking is greatly admired for its fresh ingredients, minimal use of oil, and reliance on herbs and vegetables. With the balance between fresh herbs and meats and a selective use of spices to reach a fine taste, Vietnamese food is considered one of the healthiest cuisines worldwide
 
  • Firm Tofu (đậu phụ công ty / टोफू ) - 200 gms

  • Tomatos (cà chua / टमाटर ) - 200 gms

  • Minced garlic ( tỏi băm nhỏ / पीसा हुआ लहसुन ) - 1 tsp

  • Finely diced de-seeded green chilly ( ớt xanh / हरी मिर्च ) - 2 - 3 gms

  • Sugar ( đường / चीनी ) - 1 tsp

  • Dark soy sauce ( nước tương đen / सोया सॉस ) * - 2 tbsp

  • Salt to taste ( muối cho vừa ăn / नमक स्वाद अनुसार )

  • Vegetable oil - as required for deep frying

  • Spring onion ( hành lá / हरी प्याज) - finely chopped for garnishing

  • Cherry tomatos ( cà chua bi / चेरी टमाटर ) - sliced in quarters for garnishing

(*or fish sauce if you are non-vegetarian)


 
  1. Remove the excees water, if any, from the tofu blocks - by pressing them gentally between the kichen paper towels

  2. Chop Tofu in size of 1/2 inch long rectangular blocks

  3. Heat the adequate quantity of vegetable oil in a wok - deep fry the tofu blocks to the crisp texture and light golden brown colour.

  4. Allow deep fried tofu chunks to cool inside the paper towels - to allow the removal of excess oil.

  5. Blanche tomotos in boiling water for 2-3 minutes; allow them to cool; remove from the vessel peal the skin & chopped them finely

  6. In a frying pan - heat 2 tbsp oil - add minced garlic - saute for 30 second

  7. Add chopped tomatos, soya sauce, sugar, and salt - add little water to adjust the consistency of the sauce and let the mixture simmer for 2-3 minutes on low gas flame - stir occassionally


  8. Add fried tofu to the simmering sauce [step #4] & mix well - allow the tofu chunks to absorb the sauce and let excess water be dried up-


  9. Fried Tofu in tomato sauce is ready for eating.


  10. Before serving, garnish with sliced green onion and cherry tomato


  11. Recommended accompaniment: Steam fried rice / vegetable fried rice / as a filling in rolls / or as your imagination goes on
